Lamb Shoarma

When I was a little girl, our family would go to the Turkish Markt at least twice a month. It was a big hall full of products from Turkey. The things I remember the most was the leather Jackets and bottled sausages. The one thing that we never miss to do is have lunch at our favorite Shoarma stalls. Actually there are many stalls selling the same thing in a row. The aroma of tall rolling griller really makes your mouth water. Each Shoarma will be served with a sort of pita bread cut in the middle. Lots of lettuce, tomato, and heaps of shoarma. Mayonaise, tomato ketchup and mint chutney will always be on the table and I would add heap of it..hhhmmm luv it!

The Arabic word shawarma comes from the Turkishword çevirme / ‘turning’, and has its origins in Anatolia. It is similar to the dish called doner kebab/’turning kebab’ in Turkish, and the Greek gyros ‘turned’, formerly called ντονέρ /doˈner/. A related Armenian dish is “tarna”, literally meaning “to turn”. Shawarma (Arabic : شاورما‎) is a Levatine Arab meat preparation, where lamb, goat, chicken, turkey, beef, or mixed meats are placed on a spit (commonly a vertical spit in restaurants), and may be grilled for as long as a day. Shavings are cut off the block of meat for serving, and the remainder of the block of meat is kept heated on the rotating spit. Although it can be served in shavings on a plate (generally with accompaniments), “shawarma” also refers to a pita bread sandwich or wrap made with shawarma meat. Shawarma is eaten with tabbouleh, fattoush, taboon bread,, tomato, and cucumber. Toppings include tahini, hummus, pickled turnips and amba. After years, I never could find anything that taste as good as our favorite stalls had served. Well, then I found a recipe in the internet and it was near to the taste of what I have remembered. But then I adjusted a lot and voila, found it! Now, I don’t have a rolling grilled at home so we have to strategies a bit. You will need meat of young lamb with many fat to keep that moist..and it sure is very tasty!

500 gr young lamb with lots of fat
1/2 tbs cumin
1 tsp coriander
1 tsp garlic powder
½ tbs paprika
½ tsp turmeric
½ tsp nutmeg
1 tsp ginger powder
1 tsp black pepper
½ tsp cinnamon
1 whole paprika thin sliced

How to prepare:
-combine all the ingredient in one bowl and mix well, put it in the freezer for one day
-take out, and warm it to room temperature
-heat oven and grill for 30 minutes, turn it periodically

Fresh Mint Chutney
1 cup of plain yoghurt
1/2 medium size onion
a bush of mints
a dash of paprika powder
salt and pepper to taste

How to prepare:
-Chop mint
-Dice onion
-Mix all the ingredients in one bowl
How to serve:
-eat with pita bread or rice, mint chutney, cut lettuce, tomato ketchup, and mayonaise
Point!
If no fresh mints are available, use dried ones instead
