Rengginang Rice Crackers


Makes 5 small pieces

Miyuki likes to open the rice cooker cover by pressing the buttons, it entertains her but irritates me very much. Most of the time I throw away the dried rice. This time the lid was left open for too long that all the top dried out. I didn’t have the heart to throw it in the garbage so I looked for some recipes. OMG! Why didn’t I think of this before..Rengginangs..rice crackers that I always get from people travelling to part of Indonesia. Great idea, the trick is that it has to be really dry otherwise it doesn’t puff.

Ingredients:
1 cup of dried leftover rice
a dash of salt

How to prepare:
-spread leftover rice, semi dried preferred, on a plate
-leave it on the table for 2-4 days to dry completely
-when totally dried, put it in the oven medium high for 5-7 minutes to dry out completely
-deep fry until it puffs
-take out and let the oil drip
-sprinkle with a dash of salt

Tips!
-You can leave it uncovered, but if you are uncomfortable, cover it will something that light and air can come in otherwise it will mold
-If the sun is bright and the weather is very cold, leave it outside under the sun
