Salted egg fried shrimps

If you go to seafood restaurant in Indonesia, one of the special flavor beside black pepper, sweet and sour, saos Padang and more..is salted eggs.. Yes, salted eggs with squid, shrimps and crabs. The preparation method is similar, fry the seafood first, then blend it with the margarine/butter salted egg mixture.

10 shrimps
½ lemon juice
3 cooked salted egg yolks
3 garlic cloves
2 egg whites
100 gr starch
2 tbs margarine/butter

How to prepare:
-cut the garlic until very little cubes
-take out shrimp head, keep the skeleton
-cut the back of the skeleton and clean from the black thread
-add in a bowl the shrimp, lemon juice, garlic, set aside
-prepare starch in a bowl and heat deep fry oil
-stir the egg white in another bowl
-take one shrimp at a time, dip in the starch, then egg white then starch again and drop into oil
-set aside for the oil to drain, repeat the process until all the shrimp has been fried
-in a pan, add the margarine/butter
-add the egg yolk and blend together
-add the shrimp and blend together, turn of heat
