Mie Ayam Bakso

My blog with be incomplete if I don’t add one of Indonesias’ most wanted food “Mie ayam and bakso”, chicken noodles with beef balls. In the time of recession, this goodies is still one of nations best sellers. The preparations takes time, but arranging it is quick, and eating it is a lot faster..

The best selling mie ayam franchise is Bakmi Ayam Gajah Mada. When this restaurant opened we were still abroad. So people brought this as gifts for us. Unfortunately by the time it reaches us, the noodle is all ready sour and will end up in the bin, sadly. This restaurant was so hot that bad rumors spread around. The great part is that this family restaurant survived the turmoil by strengthening their business management and marketing wise.

Mie ayam bakso
Beef balls:
500gr lean minced beef
1 garlic clove
2 tbs fried shallots
½ small onion
2 egg whites
1 beef consommé
1 tbs starch
1 tbs tapioca flour
1 tbs corn flour
½ tbs baking powder
½ tbs sugar
2 tsp salt

How to prepare:
-grate the garlic into a paste, set aside
-chop the onion into very little pieces, use food processor if necessary, set aside
-add all the ingredients in a bowl, blend and kneed for 30 minutes or 15 minutes with food processor
-boil water, take a lump of meat, squeeze, take the lump with a spoon and drop in the water
-take out when the beef balls starts to float

Chicken bits:
2 chicken breast with skin
2 cm ginger
3 garlic cloves
½ medium onion
2-5 tbs sweet soy sauce
1 tbs light soy sauce
1 tsp salt
a dash of pepper

How to prepare:
-separate the chicken skin for the chicken oil
-cut chicken into very little pieces, set aside
-cut ginger into very thin pieces, then long thin pieces, set aside
-cut garlic and onion into very little cubes, sauté in little oil until fragrant
-add the chicken, sweet soy sauce, light soy sauce, ginger, salt and pepper
-set aside when cooked

Chicken oil:
1 skin of 2 chicken breast
2 garlic cloves
1 1/2 tbs light oyster sauce
½ cup oil

How to prepare:
-chop garlic into small bits
-cut chicken skin into small bits
-heat oil, add the chicken skin. garlic, light oysters sauce

2 fresh yellow noodles
2 bunch pokcoy

How to prepare:
-boil water and add in the noodles
-take out when cooked, dropped into ice cold water, drain, set aside
-boil new water, add in the pokcoy
-take out when cooked, dropped into ice cold water, drain, set aside

How to arrange:
-in a bowl, mix the noodle with the chicken oil, drop into the serving bowl
-arrange the chicken bits, beef balls, and pokcoy on top of the noodle
-serve with chili sauce and chicken broth
