Eggplant Lasagna

Makes 20 cm pan

When I am still working up very late at night trying to finish up some work in front of the computer. I usually watch cooking videos from “Cooking with Nonna“. One winning recipe they have is eggplant lasagna. The real recipe requires mortadella sausages and heaps of mozzarella. I was drooling on it so I made my egg plant lasagna version with anything I can find in the kitchen. Here is the recipe!

The egg plant:
2 medium eggplant
¾ cup all purpose flour
1 tsp garlic powder
1 tsp fresh/dried mint
1 cup ice water

How  to prepare:
-in a bowl, add the flour, garlic, mint, and ice water
-whick until it becomes a smooth batter
-heat deep fry oil
-cut the eggplant into thin long pieces
-pat into dried flour, then into the batter, then deep fry
-take out to drain

The meat sauce:
1 medium onion
200 gr minced beef
2 tsp oregano
2 tsp salt
½ tbs sugar
1 ½ can of tomato puree
1 medium tomato

How  to prepare:
-cut the tomato outer layer thinly
-boil until the outer layer peels off
-take out, soak in cold water
-cut into small pieces and blender
-slice the onion into long thin pieces
-saute the onion
-add the minced beef
-add the salt, sugar, oregano and tomato puree
-add the fresh tomato
-cook until done

1 bag pizza cheese
1 cup parmesan cheese

How to arrange:
-add the meat gravy in the bottom
-spread pizza cheese
-add the eggplant, then repeat the process
-at the last layer, sprinkle parmesan cheese
-heat oven for 10 minutes
-place the lasagna
-grill for 15 minutes in medium heat
-take out

  1. Kayaknya terong di kita memang cepat lembek, enaknya buat di balado. Tips dariku, beli yang impor, yang cook buat tempura. Potongnya agak tebal. Digoreng setengah matengblebih sedikit aja. Trus dipanggangnya tidak lebih dari 15min, toh sausnnya sudah matang, cuma melelehkan kejunya saja.
