Nasi Uduk in Rice Cooker

Serves 4

Nasi uduk,a favorite breakfast menu for us in Jakarta. In high school, my friend always brings 3 nasi uduk in a paper wrap and we will chip in some money. It was great, we ate it together and the toppings will change daily according to what the seller was cooking. Sometimes it will be fried tempes, another time it’s fried vermicelli and chili eggs that we call granate. The Betawi version of chili sauce for this is just fried peanuts, crush with chili pepper, garlic, salt and water. I will give you the basic recipe, and you can create as you imagine. This nasi uduk can also be the base for tumpeng rice, the Indonesian birthday cake.

4 cups of rice
200 ml coconut milk
enough water up to level 4 on the rice cooker
1 lemon grass
1 screwpine leaf
2 bay leaves
2 tsp salt

How to prepare:
-add all the ingredients in the rice cooker
-turn on rice cooker until cooked
-take out all the leaves, turn the rice and let it sit for another 10 minutes to dry out more
