Trio Yellow: Yellow Rice, Grilled Chicken, and Stuffed Egg Salad

My husband invited his colleague for dinner and I was wondering what I would serve. At that time I was craving a set yellow rice with grilled chicken and a big fat bowl of warm curry soup from a local chain called “Kanako”. This restaurant serves adapted Indian influenced food with organic spices freshly grown in Srilanka and processed in Japan. On the other hand I wanted to eat some Middle Eastern food like spiced rice with raisins. Because it was all yellow, I decide to combine it with a cold egg stuffed salad with some yellow topping on it..:D 😀 😀

It’s quite simple making all of these. All you have to do is add all the ingredients in a rice cooker to make the yellow rice;  marinate the chicken and grilled; mix the egg filling in a bowl then scoop. A secret between you and me, the chicken marinate was so delicious on the chicken skin, that I ate them all and just serve them the chicken meat.

Yellow Rice with Raisins
3 cups yellow rice
water  up to level 3
½ cup raisins
2 tsp salt
1-2 tsp turmeric
½ tsp cumin powder
3 garlic

How to prepare:
-rinse the rice 1-2 times, set aside
-crush the garlic with the side of your knife
-add all the ingredients in the rice cooker and press on
-when done, take out and place it in a bowl
-blend well until the color is evenly dissolved

Grilled Garlic Chicken
2 chicken breast
2 tsp black pepper
2 tsp paparika powder
½ tsp cumin powder\
½ tsp oregano
1-1  ½ tsp salt
1 clove garlic
3 tsp vegetable oil
2 tsp lemon juice

How to prepare:
-add all the ingredient except for the chicken in a bowl and blend well
-add the chicken and marinate for 20 minutes
-cut or uncut, grill the chicken for 20-30 minutes

Egg salad
3 hard boiled egg
1/3 cup mayonnaise
1 tsp lemon juice
1 tsp Dijon mustard
½ tsp curry powder
1-2 tsp honey
a dash of white pepper
a dash of salt

How to prepare:
-peel the egg and cut it into half
-take out the yellow part and put it in a bowl
-add all the other ingredients in the bowl and mix well
-scoop the yellow egg paste back into the boiled egg white
