Ayam Woku

I love Manado-Sulawesi food very much. The taste is like a fusion of Chinese main ingredients such as garlic and ginger with Thai main spices, birds eye chili, kefir lime juice, galangel etc. There was a delicious restaurant not far from my house, so I can have lunch there when I want to. Unfortunately it moved to another place and I never ate there anymore.

I still could enjoy a lot of Sulawesi buffets in the food court of Ambassador Mall adjacent to ITC Kuningan Building. There is a row of Sulawesi food buffet there. My favorite stall is the one on the side at the ITC Building, their cooking is very spicy and tasty. Usually after eating I will sweat and have tears due to the hot level but it is something that I missed. Unlike the other recipes like Mini Klappertart and Bruine Bonen Soup that is influences by Dutch culture. This dish is originally from Manado spices. It actually requires fresh basil but there is none for sale here in Sendai so please do add it if you can find some.

Ayam Woku
5 chicken legs
½ medium size onion
4 garlic cloves
3 cm ginger
½ tsp turmeric
3 candle nut
1 lemongrass
1 small tomato
4 kefir lime leaves
1 green onions
a handful of basil leaves
1 tsp salt
2 tsp sugar

How to prepare:
-blender the garlic, onion, ginger into a paste
-crush the candle nut, set aside
-cut the lemongrass into small pieces, set aside
-cut the tomato into small pieces, set aside
-cut the green onion into thin pieces, set aside
-saute the garlic paste, turmeric, candle nut, lemongrass, kefir lime leaves, salt and sugar until dissolved
-add the chicken and cook for 20 minutes
-add the tomato and cook for 5 minutes
-add the basil leaves and green onion, and cook for another 5 minutes
