Cwie Mie Malang

New entrepreneurs always try to find new eye catching food product to roll into the market. They are aware that the Indonesian people loves mie ayam, so a lot of mie ayam varients where introduced to the market. One of that varient is Cwie Mie Malang, this noodle in concept is like Mie Ayam, the difference is that they don’t use sweet soy sauce in the ingredients and change the boiled pokcoy with fresh salad leaves. The taste is more in the salty sphere.  When this first came to Jakarta, it was so hot that there where too many Cwie Mie entrepreneurs flourishing like a fungus in the rainy seasons. But I just knew that it wouldn’t be for long because I knew that the Indonesian taste buds likes sweetness a lot and my prediction was right. Now  only a few survived and usually they will match it with another popular dish from Malang.

Preparing the dish takes a while because you have to prepare several pieces one by one but the assembling is quick and the eating faster.

The Minced Chicken Topping
3oo gr minced chicken
3 cloves garlic
2 cm ginger
½ tbs oyster sauce
1 teaspoon salt
1 teaspoon white pepper
1 sachet chicken consommé

How to prepare:
-crush the garlic with the side of your knife and cut it into very small pieces
-cut the ginger into long thin pieces
-heat oil and sauté the garlic until fragrant
-add the chicken and all the other ingredients
-turn of heat when cooked

The mushroom topping
100 gr mushroom
2 garlic
1-3 tbs sweet soy sauce
1 tsp salt
1 tsp white pepper

How to prepare:
-cut the mushroom into very small dices
-crush the garlic with the side of you knife and cut it into very small pieces
-saute the garlic until fragants
-add the diced mushroom and all other ingredients
-fry until cooked and soft

The noodle
-fresh egg noodle enough for 4 person
-1/3 cup vegetable oil
-1 clove garlic
-1 tsp salt
-1 tsp white pepper
– boil egg noodle
-when cooked, take out and rinse with cold water, set aside
-crush the garlic with the side of your knife
-in very low heat add the garlic, vegetable oil, salt, white pepper and stir gently
-when in comes to a slight bubble, turn off and cool it
-mix the noodles with the oil

Other garnishing
finely chopped green onions
-fresh salad leaves

How to serve:
-add the salad leaves in the bottom of the bowl
-add the noodle on top of the leaves
-add the chicken and mushroom
-sprinkle with chopped green onions
