As part of our cooking class today, besides the yellow rice and roast chicken, there is the tomato cucumber salad. The class version was canned tomatoes, diced cucumber and diced lemon, the meat only that put in the food processor to make it pasty. I am giving you a recipe beneath where the end result will not be pasty but in my humble opinion this version kicks my taste buds more.
- 3 large, firm tomatoes
- 2 cucumbers
- 1 small onion, red or yellow
- 2 tablespoons lemon or lime juice, depending on taste
- 2 tablespoons olive oil
- 1 tablespoon fresh mint, finely chopped
- 1 teaspoon minced garlic
- salt and pepper to taste
How to prepare:
-Finely chop tomatoes, cucumbers, and onions
-Toss with remaining ingredients and gently mix well.
-add in the food processor if you want it pasty
