Thai Pineapple Fried Rice

Serves 3

There’s a Asian restaurant down the block near my previous office that serves popular food from countries in the Asian region. They Kung Pao Chicken, Mie Hongkong, Nasi Goreng Tom Yam, Sapo Tofu, Sepangchar Kuey Teow, just to name a few. This is our favorite spot to celebrate birthdays, job raise and farewell party. One signature dish that I will always cherish is Tom Yum Fried Rice. It’s really delicious and I have never ate anywhere else with the same taste as theirs.

At home, sometimes I make it just to fulfill my tummy and taste buds. It’s not that difficult to make and you can enjoy it afterwards.

1 cup pineapple
4 cups cooked rice
1 cup of small peeled shrimps
1 lemongrass
½ small onions
3 garlic
1 big red chilis
½ cup cashew
1 egg
2 tsp chicken stock powder
2 tbs fish sauce
2 tbs tom yum paste
1 tsp salt
3 spring onion
a handful of fresh coriander leaves
shrimp crackers

How to prepare:
-cut big red pepper into little pieces
-crush the end of the lemongrass with the side of your knife and cut it into 3 pieces
-scramble eggs and set aside
-toss shrimps, dry the water and set aside
-slice onion and garlic into thin pieces and fry until golden brown
-add shrimp and then rice and mix well
-add the tom yum paste
-sprinkle evenly fish sauce, lemongrass and salt
-when almost cooked, add cashew, egg and, spring onion
