Asian Beef Stif Fry and Pokcoy

This is my mothers all time favorite, I couldn’t exactly remember in which restaurant she ate but after that she took cooking class from a professional chef to get this recipe. It’s actually very simple. All you have to do is marinate it  in a bowl, then freeze it, defrost and stir fry. She made this very often but I never get tired of it because it is delicious. If you are a busy person you can marinate and freeze it. Whenever you feel like cooking, all you have to do is take it out and prepare.

300 gr half frozen lean beef
¼ cup Japanese soyu
1 ½ tbs oyster sauce
½ tsp pepper
½ tbs sugar
½ tbs butter
2 cm ginger
2 pok coy with roots

How to prepare:
-cut the half frozen lean beef into thin slices and put in a bowl
-cut the ginger into thin slices
-add the soyu, oyster sauce, pepper, sugar, butter and ginger
-marinate it thoroughly
-place it in the freezer and let it sit for at least 3 hours, better one day
-take out and set on room temperature
-wash the pok coy thoroughly and place in a long bowl
-pour hot water and control, when cook but still fresh green in color, take out
-rinse with cold water and drain
-set on plate
-heat pan in medium-hot
-add oil and fry the beef until it’s evenly cooked and tender
-reduce the heat if necessary
