Beef Tamarind

Serves 3

I had beef and some tomato paste left from making spaghetti Bolognese and didn’t have an idea what I can do with it.  I browsed the internet and stumble upon a recipe at Karachi Foods so I started compiling anything I can find in the fridge and the kitchen. The cooking was easy because all you have to do is put all in the pan and leave it to cook.  The result was really delicious. Good with rice or naan alike.

400 gr diced beef
1 medium onion
3 clove garlic
1 tsp all spice
1 tsp dried coriander
1 tsp cumin powder
1 tsp coriander powder
1 tsp mustard seed
1/2 tbs sugar
1 tsp salt
2 tbs tomato paste
2 green chilies sliced
2/3 cup water
1 tbs curry leaves
1/2 tsp tamarind paste
1 cup carrots

How to prepare:
-press the garlic with the side of your knife and chopped it into small bits
-saute the garlic and onion until golden brown
-add the diced beef and saute a bit
-add the tomato paste and all the remaining ingredients except for the water and mix well
-well the juice from the beef has blended well with the spices start adding the water little by little
-cook for 30-45 minutes until the beef becomes tender
-add the carrots 10 minutes before turning the heat off
