This was part of the Palestinian cooking class but I stumble upon Titli Nihaan Youtube Channel and enjoyed by looking and the funny way she presented the video. According to the cooking class teacher this is some fresh dip you eat in the morning or any part of the day if you like. He used a hand mixer but I like Titli’s way of just crushing it with fork better. Serve it with bread, Pita or Indian.

4 eggplants
2-3 tbs homemade tahini
1/2-1 lemon take the juice
2 tsp garlic paste
salt and pepper to taste
3 tbs olive oil
1/3 cup chopped fresh parsley

How to prepare:
-grill or burn the eggplant on stove
-let it cool of then peel the skin
-cut it into small dices and add into a filter
-squeeze the juice out, take out and place in a bowl
-add the tahini, lemon juice, garlic paste, salt and pepper to taste
-mix well and serve

How to serve:
Serve with pita bread or any Indian bread
