Srikaya Padang Bread Pudding

Makes 6 cups

Srikaya has two forms in Indonesia, the first is as custard pudding and the second as bread jam. The basic ingredients are the same coconut milk, eggs and sugar but it’s the method of making that will differ in texture and taste. This srikaya recipe is a typical pudding that some people in Indonesia will have to break fast after a whole day of refraining from food and water.The sweetness will boost back the energy lost before taking a heavier meal with rice.

The preparation is so easy, because all you have to do is mix all ingredients in a bowl then transfer into small cups and steam it. In this case I added grated bread (because I need to get rid of it) which made it smooth. You can leave it out if you want.

Ingredients:
-3 eggs
-1/2 cup brown sugar
-3 tbs white sugar
-1 screwpine leaf
-200 ml coconut milk
-1 tsp cinnamon powder
-a dash of nutmeg powder
-4-6 loafs of bread

How to prepare:
-grate the bread loafs into crumbs, leave out the sides, set aside
-cut the screw pine leafs into small bits
-add all the ingredients in a bowl and mix well
-divide the mixture in cups
-steam for 20 minutes
-serve hot or cold
