Shrimp Scampi Fiesta

The “Two Little Cheffettes” monthly cooking challenges is back. This month ingredient challenge is ‘mushroom’. My family loves mushroom.

I was sitting in front of the TV relaxing with my daughter. The broadcast was a traveling show, tasting Southern foods in America. It was summer, so they visited a lot of outdoor barbeque stalls. Big portions of grilled chicken, big fat hot dogs, steaks with fries and salad. This show is really making me hungry. The one that struck me the most was the shrimp scampi mobile stall. They were fat, juice, full marinated and most important of all serves in a big portion. “Tonight, dinner will be shrimp scampi and some grilled veggies”, I said to my self in determination. So, I opened my fridge to find a bag of small-medium sized shrimps, assorted Japanese mushroom, some eggplants and a big onion. Just great, this is what I need to turn tonight’s’ dinner into some fiesta.

Grilled Eggplant:
3 medium eggplants, cut into thin long slices
2 tsp salt
1 bowl water

1/3 cup olive oil
enough salt to sprinkle

How to prepare:
-soak cut eggplant in bowl of water with salt
-drain and pat dry eggplant, set aside
-heat griller
-brush eggplant with olive oil and sprinkle with some salt
-grill until golden brown and repeat on the other side

Mushroom and Onion salad:
1 medium onion, cut into thin slices
500 gr assorted mushroom (champignons, portobello, shitake, etc)
2 tsp dried parsley
1 tsp salt
3 tbs olive oil
1/2 lemon wedge, take the juice only

How to prepare:
-Heat oil with olive oil
-saute the onions until soft
-saute the assorted mushroom until soft
-add salt and dried parsley
-turn of heat and sprinkle with lemon juice

Shrimp Scampi:
300 gr peeled shrimp
3 tbs olive oil
3 tbs butter
1 tbs minced garlic
1 tsp black pepper
1 tsp dried parsley
1 tsp salt
3 tsp Parmesan cheese

How to prepare:
-heat pan, add olive oil and butter
-saute minced garlic
-add shrimp, black pepper, dried parsley, salt and Parmesan cheese, stir well
-turn off heat and serve
