Ketoprak

Ketoprak, this dish consist of fried tofu, boiled beansprout, and rice vermicelli topped with peanut sauce and garlic crackers. A typical dish that Indonesian, or people in Jakarta loves to have for brunch. Sometimes the seller adds rice cakes (lontong recipe here) in the portion.

It’s not that difficult to make, the key is in the fried peanuts. I never want to fuss, so I buy the already fried and salted, the one with the skin on. If you don’t have a mortar, it’s not a problem, the food processor will do

Ingredients:
4 small fried thick tofu
1 bag rice vermicelli
1 bag bean sprout
1/2 cup fried shallots
1/2 cup sweet soy sauce
garlic crackers enough for 3 persons

How to prepare:
-cut fried tofu into small dices
-soak rice vermicelli in hot water, wash with cold water, drain, set aside
-soak bean sprout in hot water, wash with cold water, drain, set aside

The sauce:
1 bag of fried peanuts
3 garlic cloves
1 birds eye chili (optional)
1 tsp pitted tamarind (diluted in hot water)
3 tbs sweet soy sauce
1 tsp salt

How to prepare:
-make all the ingredients into a paste with a mortar or food processor
-add more warm water to get the desired consistency

How to assemble:
-on a plate add some rice vermicelli,
-then tofu,
-then some beansprout,
-then fried shallot
-then crushed garlic crackers
-pour the sauce, add some more soy sauce on top and serve
