Every weekend Mama Miyuki Easy Pantsy will introduce you to the vast options of relish/sambel that you can find in the Indonesian culinary world. There are various methods of preparing them, mostly with a mortar but some can be make with a blender. Some are raw, half done and cooked. It all depends on the accompanying dish.
Sambel terasi, a similar relish to the Malaysian “sambel belacan” is a popular common relish that you can find in “warung tegal” or other assorted buffet stalls. This relish function also as base for making laksa, nasi goreng but mostly as a relish with rice and side dishes. Some like it fresh, grind coarse with a splash of lime juice which is suitable for fried fish recipes. Other like it cooked for making and accompanying dishes I have mentioned above and this the method of preparing for todays’ relish recipe.
10 dried chilies, soak in hot water
3 cloves garlic
1 tsp shrimp paste (terasi)
1 lime leaf
1 tsp salt
1 tsp sugar
How to prepare:
-with food processor, make dried chilies, garlic, and shallots into a paste
-saute shrimp paste in generous oil
-add the chili paste, lime leaf, salt and sugar
