Sambal Dabu-dabu

Every weekend Mama Miyuki Easy Pantsy will introduce you to the vast options of relish/sambel that you can find in the Indonesian culinary world. There are various methods of preparing them, mostly with a mortar but some can be make with a blender. Some are raw, half done and cooked. It all depends on the accompanying dish.

This fresh looking relish comes from Manado. The Dabu-dabu relish consist of fresh cut ingredients poured with hot oil then marinated with salt, sugar and lime juice. It goes great with grilled fish and seafood as a side relish. Grilled fish marinated with only salt and lime juice, just delicious. My favorite is combining it with grilled snapper head.

5 shallots
1 large half ripe tomatoes
1/4 cup combined fresh cut green and red bird’s eye chilies
1/2 lime, take the juice
1/4 cup vegetable oil
1 tsp sugar
1 tsp salt

How to prepare:
-cut shallots into thin slices, add to a bowl
-add the cut green and red birds’ eye chilies
-heat vegetable oil until boiling and add to the boil
-add the sugar and salt, mix well
-add the lime juice
