Coconut sugar pudding

Coconut sugar pudding is a simple pudding that will make almost any Indonesian flash back to their childhood because their mother made it, their canteen sells its, and you can find it in the local bakery and also in the market as sweets. The interesting texture is that the coconut milk will separate from the water and that is what is so typical of this pudding. Serving it as a complimentary sweet in the restaurant might bring some nostalgia to potential customers. Especially those who had experienced being raised up in Indonesia.

1 sachet agar-agar/kanten/gelatin
200 ml coconut milk
400 ml water
1 cup coconut/palm sugar
1/3 cup sugar
1/2 tsp salt

How to prepare:

-add all the ingredients in a pan, stir until the agar-agar/kanten/gelatin dilutes then turn on the heat
-stir well until it comes to a boil
-pour in a glass pan, let it cool
-place in the fridge for 30 minutes before serving
