Manado Style Chili Chicken

The Indonesian name of this Manado dish is ‘Ayam rica-rica’, I love it so much. It is spicy, sour, sweet and fragrant and it goes well with hot warm rice. It’s a very common dish loved by Indonesia from all ethnic and thus you can find it in most lunch stalls with variation of spice adaptation. The dish uses so many spices variation so assemble them all in a plate before cooking. The process is easy because all you have to do is saute the dish.

1 small whole chicken
12 long red chili, cut into 3 pieces
2 garlic cloves
1 small onion, cut into thin slices
4 cm ginger
1 lemon grass, cut into 4 pieces then crush with the side of your knife
4 lime leaves
1 screw pine leaf, cut into small pieces
1 small green onion, cut into small pieces
1 1/1 tsp salt
1 sachet chicken consomme

How to prepare:
-clean, pat dry chicken and cut into small edible pieces
-make red chili, garlic cloves, and ginger into a paste, set aside
-heat pan with little oil and saute the onions until fragrant
-add the chili paste and saute until fragrant
-add the lime leaves, screw pine leaf, green onion, salt and chicken consomme, mix well
-add the chicken and mix well, cover and cook for 15-20 minutes
-stir gently and cover occasionally
