Steamed Rainbow Cake
Makes one 22cm cake

Steamed Rainbow Cake as known as “Bolu Kukus” is a popular catering cake that you will find in snack box, mostly on meetings. This is one of my favorite cake because of the soft texture and the fragrant smell of the coconut milk.

Making it is not difficult, all you have to do is add all the ingredient in a bowl. Mix it with and electric mixer then steam it. However, you have to practice patients during the steaming process because you have to open the lid occasionally but must guarantee that the middle part is cooked. Opening the lid prevents the cake to bubble because we want to maintain the flat structure.

Ingredients:
200 ml egg white
125 gr castor sugar
1/4 tsp salt
1 tsp SP/emulsifier
50 ml fresh milk
20 gr butter
1/2 tbs baking powder
125 gr all purpose flour
20 gr powder milk
20 gr corn starch
red, yellow and green coloring

How to prepare:
-in a bowl, mix egg white, castor sugar, salt and emulsifier with an electric mixer until stiff
-add in a bowl baking powder, flour, powder milk, and corn starch, add to the egg white mixture until dissolved
-dilute melted butter and milk, add to the egg white mixture until dissolved
-preheat steam pan
-divide the mixture in 4 bowls evenly and add the colorings
-add a color mixture to the pan in the steamer and cooked each for 7 minutes
-open the lid once every minute to prevent the cake from blooming in the middle
-repeat the process until all color has been steamed
