Manado Congee

Need some healthy breakfast ideas? These Manado Congee are healthy, packed with assorted vegetables, rice and coconut milk. The original name is ‘tinutuan’. Manadoness like to eat this with a relish similar to ‘sambal terasi’ with additional small fishes. It’s a popular food for toddler also as it is sweet and quite savory.

1 cup rice
1 lt water
1/3 cup coconut milk
2 bay leaves
1/2 tsp salt
1 tsp sugar

1/2 cup corn kernels
1/2 cup diced sweet potato
1/2 cup diced pumpkin
1 cup water spinach/Asian spinach
1/2 cup fresh sweet basil

How to prepare:

-boil water and add the rice
-clean the foam occasionally
-add the coconut milk and bay leaves, stir occasionally, cook for 10-15 minutes
-add the corn kernels, diced sweet potato, diced pumpkin, cook for another 10 minutes
-add the water spinach/asian spinach and fresh basil, stir occasionally and gently
-add the salt and sugar to taste
-add some more water if the pot is too crowded
