Chinese Stir Fry Bamboo Shoot

Serves 3

Bamboo shoots are abundant in the market, so I bought some. This time I feel like Chinese food, so I made some bamboo stir fry that my family use to have in Chinese restaurants, especially on celebrating new year. I added carrots, beansprout and spice it with chicken and shrimps. They were delicious. Besides eating with rice, you can make this as fillings’ for spring rolls then fry it for breakfast or tea time.

1/2 bamboo shoot, clean the white secretion and cut into thin long pieces
1 cup shredded carrot
2 cups beansprout, clean the roots
3/4 cup diced chicken breast
3/4 cup peeled shrimps
1/2 small onion, chopped into long slices
3 cloves garlic, make into paste
1 tbs light soy sauce
1 tbs sweet soy sauce
1/2 tsp sesame oil
1 tsp salt
a dash of pepper

How to prepare:
-in light oil, saute the garlic and onion until soft
-add the diced chicken breast, stir fry until cooked
-add the shrimps
-add the bamboo shoot
-add the shredded carrot and beansprout
-add the light soy sauce, sweet soy sauce, sesame oil, salt and pepper
-stir fry for a while and cover the pan
-turn of heat when cooked (the beansprout still crispy)
