Chicken Risoles

Risoles
Makes 30-50 pieces

Another snack box recipe today is “Risoles”, fried crepe in bread crumbs with ragout. This is not a favorite snack of mine. The making process is a pain but it taste great, make sure to drain the oil well.

The crepe
Ingredients:

250gr flour
2 eggs
30 gr butter (melted)
1/2 tsp salt
400 ml milk

How to prepare:
-whisk the egg and flour together
-add the milk gradually, mix well
-add the melted butter, mix well
-add the salt, mix well
-heat small pan
-add some mixture and make thin pancakes
-leave some of the mixture to glue later

The filling
Ingredients:

2 tbs butter
1 skinless chicken breast, cut into small dices
200 gr long beans, cut into thin slices
1 carrot, cut into small dices
1 tsp garlic paste
1 small onion, cut into small dices
1 green onion, cut into thin slices
1 chicken consomme
1/2 tsp nutmeg
1 tsp salt
5 tbs sugar
a dash of pepper
9 tbs flour
800 ml milk
125 gr kraft block cheese, grate into thin slices or cream cheese

How to prepare:

-heat pan, add butter
-saute the garlic paste and onion until fragrant
-add the diced chicken, saute until 3/4 cooked
-add the carrot and the green beans
-add the milk, nutmeg, salt, sugar, pepper
-add the flour and mix well until thick
-add the cheese and mix gently

The outer coating
Ingredients:
2 cups flour, sifted
4 eggs, battered
1 bag bread crumbs

How to assemble:
-place a crepe on a plate
-add a table spoon of filling
-fold and roll
-glue the end side
-place all the filled crepe in a tray
-cover it with flour, all sides has to be floured
-heat deep fry oil
-take a crepe and tap out the flour
-lay in egg batter
-lay in bread crumbs
-fry until golden brown
