Mie Goreng Jawa
Serves 4

At night, there will be seller with carts selling cooked on the spot food with a big wok. It is usually fried rice, noodles, vermicelli or cap cay. Some of the sellers is influenced by Chinese cooking, some Japanese but mostly just spiced it up with cheap chili sauce and cheap sweet soy sauce. One of my favorite night time food is Javanese fried noodles. What sets it apart is that it uses candle nut in the ingredients. I can eat this whole plate by my self because it is so tasty.

dried yellow noodles enough for 4 person
1 cup shredded cabbage
1 cup shrimps
1 cup diced chicken meat
3 tsp garlic paste
3 shallots, finely sliced
2 candle nuts
2 mini tomato, mashed
1/3 cup sweet soy sauce
1 tsp salt
1 tsp sugar
a dash of pepper

How to prepare:

-boil water, cook the noodles, take out and drain, add in a bowl
-add sweet soy sauce and blend together, set aside
-make garlic and candle nut into a paste and fry with little oil
-add the shallots and fry until golden brown
-add the chicken and fry half done
-add the shrimp
-add the sugar and salt
-add the mashed tomato
-add the noodle
-add the cabbage
-stir occasionally until cooked
