Mac and Cheese
Serves 3

I had bought a bag of macaroni. In Indonesia, they will turn this into macaroni soup or macaroni schotel. My daughter is not so fond of light soup and have a hard time finishing macaroni schotels, so I had to think of other recipes. I decided to innovate some Mac and Cheese and here is the recipe. Fortunately my daughter ate much of it.

Ingredients:
3 cups of dried macaroni
olive oil
1 clove garlic, crush with the side of your knife and cut it into little pieces
1 small onion, cut into long pieces
150 gr minced chicken
1 cup shredded cheese
2-3 tbs flour
400-500 ml milk
1 tsp salt
1 tsp dried parsley
3-5 tbs tomato paste

How to prepare:
-boil water and cook macaroni
-take out when cooked and rinse in cold water, set aside
-heat olive oil, saute garlic and onion until fragrant
-add the minced chicken, saute until 3/4 cooked
-sprinkle flour
-add milk and stir until it has thick consistency
-add salt, dried parsley, mix well
-add tomato paste, stir gently

How to assemble:
-in a bowl mix some macaroni and the sauce together
-serve
