Tom Kha Ghai

Tom Kha Gai

Serves 3

This is one of my favorite Thai soups, Tom Kha Ghai. It is chicken soup with coconut milk and Thai fish sauce. We Indonesian have a similar dish to this soup, called “Opor” (recipe here). The difference is that we don’t use fish sauce and coconut water instead of chicken stock. Anyway, I love this soup because it taste great and delicious.

500 ml light coconut milk
500 ml chicken stock
2 chicken breast, cut into dices
2 cups mushroom in brine
3 cm galangal, cut into slices and crushed
3 cm ginger, cut into slices and crushed
1 lemongrass, cut into slices
5 Kefir lime leaves
1 cup fresh cilantro
1 lime, take the juice
1/3 cup fish sauce
2 tbs sugar
5 mini tomatoes, cut in half

How to prepare
-boil in low heat the chicken stock and coconut milk
-add the diced chicken
-add the mushroom
-add the galangal, ginger, lemongrass and kefir lime leaves
-when all is cooked, turn of heat
-add the lime juice, fish sauce and sugar
-add the cilantro and tomatoes
