Beef Green Moong Daal Soup

Serves 4

Green Moong Dal is a very healthy bean that we Indonesian believes will help pregnant woman have babies with thick hair and have more breast milk.This is also a supplement for toddlers to prevent them from malnutrition in the early stages. The common method of preparing this is to make it as a sweet congee (recipe here). This time I am giving you a healthy recipe that you can prepare for dinner tonight. It is a tasty soup made with green moong daal and beef based stock

300 gr beef chunks with fat
1/2 cup dried green moon daal
1 1/2 lt water
1 medium 3/4 ripe tomato
1 small onion
4 garlic cloves
1 green onions
1/3 cup chopped parsley
1 tbs margarine

How to prepare:
-clean and soak dried green moong daal in cold water for 6 hours
-boil water and add the beef chunks and green moong daal, cook for 30 minutes
-cut onion into half then thin slices, set aside
-crush garlic with the side of your knife the cut into small pieces, set aside
-in a pan saute the onion and garlic with margarine, when soft, add into the soup and cook for another 30 minutes
-clean the foam once in a while
-cut tomatoes into small dices, set aside
-turn of heat, add the diced tomatoes and parsley
