Sambal Ebi Ingredients

Ebi is dried small shrimps that is usually an accompanying ingredients in Chinese influenced Indonesian cooking. They can be made into delicious dried chili that are sold popularly in bottles. You can eat it like adding abon, meat or fish floss, on rice or you can add it into additional cooking with fried potatoes or sauteed vegetables. Make sure that you fry it dry, so use non sticky pan for frying. For this there is no short cut. You have to grind the ebi by mortar to get the flaky texture. Some people add long red chili and galangal to this recipe. But here I give your the basic recipe. Feel free to experiment.

sambal ebi

500 gr ebi
10-25 assorted small chilies
5 cloves garlic
2-3 tsp sugar
1 tsp salt

How to prepare:
-fry the ebi until brown, take out and drain oil
-with a mortar, crush the ebi until soft
-blender the chilies and garlic
-heat oil and add the chili, garlic paste, sugar and salt
-add the ebi and fry it dry, maintain low to medium heat
