Sambal Ayam Goreng Bandung Ingredients

So, so far Mama Miyuki has already publish several kinds of relish to go with fried chicken and they come from different part of the Indonesian cuisine. Today, we will prepare the relish of friend chicken from Bandung, West Java. Compared to other relish, the Bandung relish has many different kind of ingredients and it uses terasi, shrimp paste. This additional gives it unique taste. You have to be careful though that terasi might cause allergic reaction. So, make sure you have no allergies before you take a lot of these in your plate.

Ingredients:
8 long red chilies, clean the seeds, cut into 4
10 shallots/1 medium red onion
1 tomato
1 lemon grass, cut into 4
1 galangal
3 bay leaves
1/2 tsp terasi/shrimp paste
1/2 tsp salt
3 tsp sugar
1/3 cup oil

How to prepare:
-blender the long red chilies, shallots, and tomato, set aside
-heat oil and sauted the terasi until fragrant
-add the chili paste
-add all the remaining ingredients
-fry until cooked
