Bali Relish Chicken

If you ever have the opportunity to visit Holland, you will find a lot of Indonesian food outlets around town. These shops are not restaurants. They sell Asian ingredients and buffet style assorted Indonesian food for you to take away. There is gado-gado, ayam kecap, opor and one of our favorite “ayam bumbu Bali”. That is today’s recipe, Bali relish chicken, very tasty and somehow the process lower the spiciness of the dish. The dish is fried chicken with bone and fried again with Bali style relish.

1 whole chicken cut into pieces as you like
2 tbs lime juice
1/2 tsb salt

1 small onion, diced
4 cloves garlic
3 candle nut, crush
2 bay leaves
3 lime leaves
3 cm galangal, cut into small pieces that smash
2 cm ginger, peeled and cut into small pieces
10-12 long red chilies
1 medium tomatoes,
2 tbs sweet soy sauce
1 tsp sugar
1-2 tsp salt

How to prepare:
-mix the lime juice and salt and marinate the chicken for 10 minutes
-heat deep fry oil and fry the chicken until dry and golden, set aside
-blender into a paste the onion, garlic candle nut and ginger, saute until fragrant
-blender the chilies and tomatoes and add into the fried garlic paste
-add the bay leaves, lime leaves, sweet soy sauce, sugar and salt.
-add the fried chicken and mix well.
