Teochew Duck Rice

I was craving so much for duck rice, those sold in Malaysia and Singapore. I wanted to make the duck the Chinese style but without all the fuss like hanging it the drying it then grilling it. Moreover I want it with teochew sauce all over my duch a rice. Gee, so many things on my mind. So I went to the supermarket and brought boneless duck meat. Basically to have a good texture for duck, the oil, marinate or excess water have to drip. So, I had this idea of putting the meat on a baking tray they cook it the Chinese duck way. After that I marinate it again Teochew style, which I adjusted from “Only SLightly Pretentious” blog before grilling. To cut time, I combined both of the method. The outcome was amazingly close to perfect with preparation time before dinner time (around 1,5 hour). Maybe be next time I will stock it for more.

2 duck breast

1/3 cup sugar
1 tbs honey

2 cups water

1 tsp salt
3 tbs sweet soy sauce
1/2 tbs oyster sauce
2 tbs light soy sauce

1 small onion (thinly sliced)
4 cloves garlic (peel the skin then crush)
1 tsp Chinese five spices powder
3 cm galangal (cut into slices)
1/2 tsp clove powder
1/2 tsp cinnamon
1 star anise
2 cardamom seed (crushed)

for garnish:
coriander leaves (cut)
cucumber (thinly sliced)

teochew duckHow to prepare:
-add all the ingredients except for the duck in the pan, mix well,turn on heat
-add a baking tray to the pan
-place the duck on the tray
-when the water is boiling, lower the heat
-pour the marinate water over the down on both sides for 20 minutes
-heat the oven on high for 5 minutes
-replace the duck with the tray to the oven
-there will still be some gravy left for later on when serving
-grill for 15 minutes until crispy

How to serve:
-add white rice
-add the cut cucumber on the sides
-add the duck on the cucumber
-pour some marinte
-sprinkle with cut coriander leaves

  2. report mbak, aku naif sekali pake resep ini buat dada bebek lokal, hehehe
    hasilnya alot, jd aku taruh ladi di baking tray trus aku kasih saus plus tambah sedikit air, traynya ditutup alumunium foil trus dipanggang lagi 150 C selama 45 menit, bt hasilnya empuk, hehehe
    aku rasa resep ini pake bebek peking mungkin lebih cocok kayaknya…
