Renkon or lotus root is a vegetable that beautifies food and is vastly used in Japanese cuisine. The structure is stays crispy and firm even after being cooked. This vegetable also provides minerals such as copper, iron, zinc, magnesium, and manganese. Today I bought a bag of cut renkon in brine, equivalent to 2 fresh lotus root. The great part is that I don’t have to soak them in water with vinegar before cooking. We ran out of snack at home so I decided to make some renkon chips which was amazingly so easy that you might stop buying ready made potato chip again.
1 bag of cut renkon in brine/ 2 set of lotus root,peeled, cut and soaked in water and 1/2 tablespoon of vinegar
1 tbs table salt or any chips flavor like cheese/barbecue etc.
How to prepare:
-drain the water and pat dry the renkon
-heat deep fry oil and fry the renkon until crispy and light brown
-take out and drain oil
-add all fried renkon in a hard plastic container
-sprinkle salt or any other flavor and cover the container
-shake the container and serve
