Daigakko Imo

daigakko imo

Serves 3

Sometime I don’t feel like cooking. In this state, I usually go to the University canteen to buy some appetizer and some set of meals excluding rice for lunch or dinner. One thing that I will not miss is this “daigakko imo” dish, literally means ‘university potato’, this names derives for the fact that this dish is university student favorite dish because it is sweet, they serve in abundance and is cheap which is necessary fits their budget. My version add some honey into it and boy it is so addictive.

1 medium sweet potato, cut into bite-size pieces
1/3 cup sugar
1 tsp soy sauce
1/2 tbs honey
2 tbs water
1-2 tsp white sesame seeds

How to prepare:
-deep fry the sweet potato in new oil until golden brown and crispy
-drain oil and set aside
-in a non sticky pan, add the sugar, soy sauce, honey and water
-stir until caramelized
-add the fried sweet potatoes
-stir carefully
-add the sesame seeds
-place them in non sticky paper
-let it cool and crisp
