Banh Lot Xao

Vietnamese cuisine has a vast varieties of rice based noodles. Today, I feel like cooking Banh Lot Xao, stif fry rice vermicelli the Vietnamese style.I added some shrimps to enhance the flavor. It was a great menu as all the family enjoyed it. This menu is also great for children Bento. The point is to add crushed peanuts on top of the stir fried rice noodles instead of fried shallots.

Ingredients:
Rice noodles enough for 4 people, soak in boiling water, rinse in cold water and drain
3 cloves garlic, minced
300 gr shrimp
3 tbs kecap, sweet soy sauce
3 tbs fish sauce
1 tsp salt
a dash of pepper
2 eggs, scrambled
1 green onion, chopped
1 mustard green, chopped
1 cup crushed peanuts

How to prepare:
-heat pan with little oil
-sautee minced garlic until fragrant
-sautee shrimp
-add the rice noodles, stir evenly
-add the kecap, fish sauce, salt and pepper, stir evenly
-add the scramble egg, stir evenly
-add the chopped green onion, stir evenly
-add the chopped mustard green, stir evenly
-serve it with crushed peanuts
