Hi all, Mama Miyuki is back with the second batch of popular Indonesian relish. Today’s recipe is Sambal Ayam Pop, a relish from Padang. The relish is not that hot and it is tasty and savory. The relish itself is called sambal tanak but it popularly accompanies ayam pop so the general people calls it so. Ayam pop itself is poached chicken in coconut water with some spices. Then fried lightly before serving. The chicken that they usually use is normal grown chicken, we call it ayam kampung/village chicken but nowadays they also breed it in cities so, he he he..In my opinion, this is the Hainan chicken of West Sumatra. If you like Hainan chicken, then you might like this too.

sambal tanak
Ingredients:
20 long red chilies, clean the seeds, cut into 4 pieces
5 red small chilies, clean the seeds
2 cloves garlic
4 cloves shallots/1/2 small red onion
1 medium tomato
1/2 cup oil
2 lime leaves
2 tbs coconut milk
a dash of cinnamon
a dash of chicken consomme
1 tsp salt
1 tsp sugar

How to prepare:
-boil water and add the long red chilies, small chilies, garlic cloves, shallots and tomato
-cook until soft
-take out and drain the water
-blender all the boiled ingredients
-heat oil and add the chili paste
-add all remaining ingredients
-fry until the chili paste are cooked
