I think the best tasting deep fried omelet is the one sold in Padang restaurants. It is tasty and thick. For years I wondered how they made it, it turns out that they use duck eggs and chili relish as spices. To keep it strong, they use corn starch or flour then deep fry it. At home we don’t like it too oily but it is up to you.
Ingredients:
4 eggs/3 duck eggs
3 tbs dried coconut flakes, fry in pan with no oil until fragrant
5 shallots
5 long red chili
1 tsp garlic paste
1 tsp salt
1 tbs corn starch
1 green onion,cut into small pieces
How to prepare:
-add all the ingredients in a bowl
-deep fry or fry in little oil
This looks AWESOME! I adore duck eggs and would never have thought to pari their richness with coconut. Brilliant. Do you ever put it in bread to make a sandwich? What do you eat it with?
The taste is addictive, trust me..Yes rice or bread will do the trick
